We had 8 tomatoes from Justin's parents' garden about to go bad, so I looked up tons of stuffed and roasted tomato recipes looking for ingredients we already had on hand, and finally stumbled upon this recipe: Ketchup and Eggs for Grown Ups.

Update: 7:19 p.m. Well, I'm not a huge roasted tomato fan, but it was pretty good. Justin even went back for seconds! I was intrigued by the way the eggs had cooked in the folds of the tomato and liked the taste of the yolk. Unfortunately there are two left, and I'm uncertain how the leftovers (especially the egg) will taste tomorrow.
